Do you REALLY have a valid reason to disable it, or is it just that you don't want Microsoft controlling you? You can always leave it and set some other browser to be the default and set Adobe Reader DC to be the default program for PDF files. Then delete shortcuts for Edge from the Desktop and Taskbar. It's always a good idea to have a second or even third browser available in case one gets infected or otherwise messed up.
If you absolutely have to get rid of it, try these steps: https://thinkmobiles.com/blog/how-to-uninstall-microsoft-edge/
Try to avoid using third-party uninstallers.
